I trained in Spain under renowned master carvers — Laura and Cristian from Sabor Umami, Víctor Sanchego, and Pepe Catalá — where ham carving is not just a skill, but a craft that demands precision, knowledge, and deep respect for centuries of culinary tradition.
Through Doña Marta · Iberian Master’s Cut, I offer a specialized live carving service of Iberian Acorn-Fed Ham (Black Label) for private and corporate events across the Bay Area.
I also have extensive experience in catering coordination and gourmet service design, gained during my years leading Mediterranean Chef Table in Spain, where I curated exclusive culinary experiences centered on Mediterranean cuisine.
I work with one clear purpose:
to present each ham with the same excellence with which it was produced — honoring one of Spain’s most iconic gastronomic traditions, and ensuring that every event is truly special and unique.
